Made by the brilliant Arthur Alsop and Nic Walker deep in the East Sussex countryside, this is a semi-firm cows’ milk cheese that’s something like an English Emmental (it even has the characteristic ‘eyes’) but with a sweeter, nuttier, more buttery flavour. Excellent for eating as it is, it’s also a superb melting cheese. Pasteurised, vegetarian.
